  • 150 g caster sugar
  • 10 g vanilla extract
  • 140 g plain flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    METHOD
  1. Preheat oven to 180 degrees celsius. Grease and line a Thermomix Rose Gold Small Oven Tray or a 20cm square cake pan with baking paper.
  2. Weigh chopped butter and broken white chocolate pieces into the Thermomix bowl and melt together for 3 minutes, 70 degrees, speed 1.
  3. Check that all of the butter and chocolate is melted. If required, scrape down the sides of the bowl and continue for 30 seconds, 70 degrees, speed 1.
  4. Add caster sugar and vanilla to melted butter and chocolate mixture and mix together for 10 seconds on speed 3.
  5. Allow a few minutes for the mixture to cool to approx 40 degrees before adding plain flour and eggs. Mix together for 10 seconds on speed 3.5. If required, scrape down sides of bowl and repeat.
  6. Add dried blueberries and mix for 5 seconds on speed 2.
  7. Pour contents into lined baking tray and flatten mixture out with the back of a spatula. Bake in preheated oven for 30 minutes, turning tray around half way to ensure even cooking.
  8. When cooled, cut into squares and dust with icing sugar. Slice is easier to cut if placed in the fridge before cutting.

Tip

This is an incredibly versatile recipe in that you can add whatever you wish. It can also be gluten free, by changing the flour to GF plain flour. Suggested variations include fresh raspberries or blueberries, dried cranberries and pistachio's, milk chocolate chips with slivered almonds, dried apricot and macadamia's, Varieties are endless ☺.Have fun !!
