  • 175 g rice
  • 50 g Tapioca
  • 1 tsp Bicarb. Soda
  • 2 tsp GF baking powder
  • 1 tsp xanthan gum, (see Tip)
  • 1/4 tsp salt
  • 150 g castor sugar
  • 1 egg
  • 110 g apple puree
  • 60 g coconut oil, melted
  • 150 g Frozen Blueberries
  • raw sugar, (Optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method:-
  1. 1.
    Preheat the oven to 180°C
    Grease a 12 hole muffin tin. (Or line with Muffin Cases)
    2.
    Place Rice and Tapioca into TM bowl. 2 min/speed 10
    Scrape down sides.
    3.
    Add the rest of ingredients (except the Blueberries & the optional raw sugar) in the order that they appear in the ingredients section. 5 sec/speed 5
    Scrape down sides.
    4.
    Add the frozen Blueberries. 20 sec/Counter-clockwise operation/speed 2
    Repeat if necessary.
    5.
    Spoon the batter equally between the 12 muffin holes/cases.
    6.
    Sprinkle a little raw sugar on each muffin (optional) and then bake in the oven for approximately 25-30 minutes, or until a skewer inserted into the centre comes out cleanly.
    7.
    Cool on a wire rack so that the bottoms can dry out a little.

Tip

Xanthan Gum can be found in Health Food Stores.

Other Ideas:-
Instead of blueberries, try blackberries, raspberries, mulberries, or mixed berries.
