Carrot cake roll

Ingredients

Carrot cake roll...dough

  • 200 g carrots, washed and roughly chopped
  • 3 eggs
  • 120 grams sugar
  • 1 dash vanilla
  • 40 grams oil
  • 1/2 tsp salt
  • 120 grams plain flour
  • 1 tsp baking powder
  • 1 tsp ginger
  • 1/4 tsp Nutmeg
  • 2 tsp cinnamon

Filling

  • 250 grams cream cheese
  • 80 grams Butter
  • 250 grams icing sugar
  • 1 dash vanilla

Recipe's preparation

    Dough prep
  1. 1. Add carrots to the Closed lidand blitz sp 5/5seconds. Set aside.
    2. No need to rinse the bowl, add eggs, sugar, oil, vanilla and salt and blitz sp4/30 seconds.
    3. Add remaining ingredients to a small bowl and whisk lightly to combine.
    4. Add to the Closed lid along with the carrots and blend sp 4/10 seconds. Scrape and repeat.
    5. Spread the (thin) mixture evenly over the pan.
    6. Bake at 180°C for about 12-15 minutes.
    7. Meanwhile, spread a clean t-towel onto a bench top and cover with a piece of baking paper.
    7. As soon as the cake is ready, tip it onto the paper and roll it up Swiss roll style. Leave to cool for an hour or so.
  2. Filling
  3. 1. Combine all ingredients in the Closed lidand blend sp 4.5/ 20 seconds, scraping inbetween if neccessary.
  4. Assembly
  5. 1. When the roll has cooled, gently unroll, remove the paper and spread with 2/3 of the filling.
    2. Smother the roll with the remaining filling, or simply dust with icing sugar.

Tip

This is a nice twist on the standard, (but still yummy) carrot cake in a loaf pan.
Don't panic if despite all your best efforts the cake splits while rolling it up after filling..!
I have made this many times...sometime it works..sometimes it doesn't...go figure..
Queue the "extra filling/icing".. tmrc_emoticons.;)
Just smother it in the extra reserved filling...AKA "icing" and no-one will be the wiser.. tmrc_emoticons.D
But if it's perfect...just show off your skills and dust with icing sugar..you clever thing you..tmrc_emoticons.D

    Beautiful, moist and full of flavour.. I used raw sugar and reduced to about 60 grams, just for personal taste only as im having to cut back on sugar as a whole.. Thank you for another great recipe
