Cherry Clafoutis (Cherry Batter Pudding)

  • 25 grams Butter, For greasing dish
  • 2 eggs
  • 200 grams Milk
  • 30 grams plain flour
  • 30 grams castor sugar
  • 0.5 teaspoon vanilla essence or dark rum
  • 350 grams fresh black cherries, washed, stalked but not stoned

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cherry Clafoutis
  1. Preheat oven to 200 degrees Celcius. Grease round ceramic oven dish (approximately 20cm) and set aside.

  2. Place eggs, milk, plain flour, castor sugar, and vanilla essence or dark rum into mixing bowl and mix 20 sec/speed 6.
  3. Wash and pat the cherries dry. Spread them evenly in the baking dish. Pour in the batter.
  4. Bake in the centre of the oven for 20-30 minutes or until the top is golden brown or until a wooden skewer inserted into the centre comes out clean.
  5. Dust lightly with icing sugar, and serve the clafoutis while it is still warm.

Tip

Can be served cold.

Could be served with a dallop of cream.

I have found it's best to use whole fresh cherries as they maintain a whole and full shape which is very pretty when cooked and served compared with jar or frozen cherries that tend weep into the mixture and result in a sadder and soggy looking pudding.
