Cup Cake Batter

  • 90 grams Butter
  • 170 grams Self Raising Flour, (1 cup)
  • 2 eggs
  • 1/4 teaspoon vanilla
  • 240 grams sugar, (1 cup)
  • 125 grams Milk, (1/2 cup)
  • 1 1/2 tablespoons Cacao or cocoa
  • 1 Cherry Ripe 52g Chocolate Bar

Icing (Chocolate Ganache Recipe from The Basic CookBook)

  • 100 grams dark chocolate, (broken into pieces)

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Cup Cake Batter
  1. Pre-heat oven to 160 degrees. 

  2. Add the Cherry Ripe to the bowl and chop on turbo for 1 second. Set aside (no need to wash bowl)

  3. Melt butter in the bowl for 1.5 minutes, 70 degrees on speed 3.

  4. Add in all other ingredients except for the chopped Cherry Ripe. Mix for 1.5 minutes on speed 5.

  5. Add in the chopped Cherry Ripe pieces. Mix for 30 seconds on speed 2.

  6. Pour batter into cup cake cups. Bake for 20-25 minutes. Allow to completely cool before icing.

  8. Place dark chocolate into mixing bowl and grate 10 seconds, speed 8. Scrape down sides of mixing bowl with spatula.

  9. Add cream and heat 2 minutes, 50 degrees, speed 3. Allow to cool completely.

  10. Insert butterfly whisk and whip 1-2 minutes, speed 3.

  11. Using a sharp knife cut the Cherry Ripe bar into thin strips.

  12. Place icing on cup cakes and then place 2-3 strips of cut Cherry Ripe onto each cup cake.
