Chewy Rice Bubble and Sultana Cookies

  • 225 grams white sugar
  • 125 grams Butter
  • 1 level tsp vanilla essence
  • 1 egg
  • 175 grams plain flour
  • 45 grams dessicated coconut
  • 100 grams sultanas

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chewy Rice Bubble and Sultana Cookies
  1. Preheat oven to 160 degrees celcius and line 2 baking trays with non stick paper.
  2. Weigh sugar into TM bowl and mill for 10 seconds on speed 10. Wait 30 seconds for the sugar to settle and scrape down the sides of the TM bowl.
  3. Weigh butter and add vanilla to milled sugar and cream together for 1 minute on speed 4.
  4. Scrape down the side of the TM bowl if needed and add egg. Mix for 30 seconds on speed 4.
  5. Weigh flour and coconut into TM bowl and mix for 10 seconds on speed 4.
  6. Scrape down the sides of bowl if needed and add sultanas. Mix for 10 seconds, speed 2 on reverse.
  7. Using a heaped dessert spoon (or weigh cookie dough at 40g each), roll into balls and then roll in rice bubbles. Coat well. Place on trays allowing room to spread and bake for 15-20 minutes turning tray around half way through for even cooking. Remove from oven when cookie edges are starting to brown.

    Reduced sugar by 100g and plenty sweet enough with good brand sultanas tmrc_emoticons.)

    van der Ploeg:Hello, pleased to hear you like the recipe. I have used it with cornflakes as well. This was my first recipe added to the Recipe Community and I reliased I spelt cookie incorrectly. Wasn't sure how to edit it to change my typoWink. Only could find the variation option, so the variation is just correcting my word cookes to cookies. Thanks Smile

    These are so good! Love the crunch of the rice bubbles....makes a nice change from using cornflakes. I used spelt flour with mine and I might reduce the sugar a little next time. Cooking 7The instructions were very clear - thank you. Just wondering...how is your variation recipe different from your original?
