Chocky Rock Biscuits - Cornflake and choc chip biscuits

  • 250 grams Butter
  • 200 grams raw sugar, (or castor sugar)
  • 2 eggs
  • 1/2 teaspoons vanilla essence
  • 300 grams self-raising flour
  • 100 grams chocolate chips
  • 50 grams Cornflakes, (+ 2 cups for rolling)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Pre-heat oven to 180 degrees.
    Line 3 baking trays with baking paper.
  2. If using raw sugar add to bowl
    blitz 10 seconds, speed 10
  3. Add cubed butter
    Cream 30 seconds speed 4
  4. Add eggs and vanilla essence
    5 seconds, speed 4
  5. Add flour
    8 seconds, speed 5
  6. Add chocolate chips and cornflakes combine
    8 seconds reverse speed 5
    (You may need to remove jug and combine manually with spatula)
  7. Using two teaspoons, form walnut sized balls. Roll in lightly crushed additional cornflakes.

    Bake 180 degrees, 15-20 minutes.

Tip

You can subsitute some of the choc chips for other flavours eg sultanas, pistachios.
