Chocolate and Zucchini Muffins
- 200 g zucchini, trimmed and cut into pieces
- 90 g vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 100 g raw sugar, *see tip
- 130 g plain flour
- 30 g cocoa powder (70% cocoa)
- 2 tsp baking powder
- 1/4 tsp salt

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 180 degree celsius
Line 12 hole muffin tin with muffin cases
Place zucchini pieces into mixing bowl and chop on speed 5 for 2 seconds
Scrape sides with spatula and repeat
Add oil, eggs, vanilla, sugar (see tip) and mix on speed 4 for 5 seconds
Add flour, cocoa, baking powder, and salt - reverse speed 3 for 10 seconds.
Mix with spatula if needed
Divide mix into muffin cases
Bake for approximately 20 minutes or until cooked

Tip
I don't like my cakes very sweet, so if you prefer a sweeter muffin add more sugar - original recipe had 3/4 cup sugar (135g)

Thank you for this recipe. My fussy daughter had no idea there was zucchini in it. She's a sweet tooth so next time I probably will add the extra sugar that you mentioned in your tip. I also used half plain flour and half wholemeal plain flour. She gobbled them up!
