Chocolate Nut Chia Muffins (GF DF refined sugar free)

Ingredients

12 portion(s)

  • 300 g Mixed Nuts, I used equal parts Walnuts, Pecan and Macadamia (because i didn't have any almonds)
  • 100 g Shredded coconut
  • 70 g buckwheat flour
  • 100 g rapidura sugar
  • 4 eggs
  • 100 g Almond milk
  • pinch salt
  • 2 tablespoons cocoa powder
  • 2 tablespoons chia seeds

Recipe's preparation

    Choc/nut/chia muffins
  1. Preheat oven to 180'C

    Add nuts and coconut into mixing bowl

    10sec/sp9

    Add Buckwheat Flour and rapidura

    5sec/sp3-4

    Add eggs, Milk, salt

    Reverse/5sec/sp4

    Add Cocoa and chia 

    Reverse/20sec/sp4-5

     

    pour into muffin tins

     

    Mini muffins took 20mins (my oven is slow - check at 12-15mins)

    Larger muffins took 40mins (check at 30mins)

     

    Let cool in pan then transfer to cooling rack.

     

    EAT!!!

Tip

These muffins are quite dense and a little bit rich. They make a great filling, protien based snack. 

My 2 yr old LOVES them!

I make  a tray of mini and a tray of larger ones and we share them!

     I topped them with a simple vanilla icing. 

    My children absolutely loved these. Fantastic for school lunches, as they are quite filling and deceptively healthy.  A huge thumbs up.

    You could probably just do this in two steps 

    Mill nuts. Add all other ingreadients then mix on Reverse/20sec/Sp5
