Chocolate zucchini brownies GLUTEN/EGG/SUGAR and DAIRY FREE

  • 1 tbsp chia seeds
  • 150g white rice
  • 150g Almonds raw
  • 2 tsp Ground espresso coffee
  • 1 tsp bicarbonate of soda
  • 1 pinch sea salt
  • 500g zucchini
  • 200g Dark chocolate (min 70%), Broken into pieces
  • 3 tbsp/35g coconut oil
  • 100ml Almond milk (or plant milk of choice)
  • 2 heaped tbsp raw cacao powder
  • 1 tsp Stevia powder, More or alternative sweetner to taste
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract or paste

Recipe's preparation

    Egg free/ gluten free/ sugar free and dairy free if you make your own chocolate. I like quirky jo's. I PREFER a little RAPADURA SUGAR. I USUALLY ADD 50g for the kids to enjoy these beauties. For a less rich dark chocolate brownie omit the cacao powder.
  1. Heat oven to 180•C and line lamington tin with baking paper or lightly spray silicone slice mould

     

    1. Grind Chia seeds for 25 sec / speed 10.  Set aside in a small bowl.

     

    2. Mill rice for 1 min / speed 10 and place aside in seperate bowl to chia.

     

    3. Now grind almonds for 15 sec / speed 10. Leave in TM bowl and return rice flour to TM bowl and add ground espresso coffee, bicarbonate of soda, pinch of salt and mix for 3 sec / speed 6 and set aside. 

     

    4. Chop zucchinis into 2cm pieces and add to TM bowl and mix 4 sec / speed 5. Scrap down sides and repeat for 2 more secs. The consistency should be finely grated but not mushy. Set aside  

     

    5. Return Chia grounds to bowl and add 6 tbsp of water and mix for 1min 20 sec / 37•C / speed 3.  A jelly like mixture will form. It should have the consistency of raw egg whites. Add zucchinis mix speed 5 Counter-clockwise operation for 5 sec and set aside. 

     

    6. No need to wash out bowl but now place chocolate, coconut oil, plant milk and melt in TM bowl for 2min 30sec on 60•C speed 2.5 MC on 

     

    7. Add Stevia powder, cacao powder, apple cider vinegar ,vanilla extract, zucchini mixture and the milled ingredients set aside. Mix all for 30 sec Counter-clockwise operation speed 4. Scrape down sides and continue for 5 sec more. 

    TIP ADD 7 DROPS OF 100% PURE ESSENTIAL ORANGE OIL  

    Spoon into Lamington tray and bake for 30 minutes or until skewer comes out clean. Ovens can vary depending on settings and shelf height.

    I have made these a couple of times now for a friend that is very health conscious and doesn’t eat sugar. They are lovely. It’s a generous amount so I freeze some for myself. It freezes well and goes nicely served with fresh cream or even on their own.

    very nice.
    A few errors on my part. I thought quinoa was chai seeds in my container, not! So 1tbs ground quinoa was added. I then used 1 tbs of ground linseed seeds, this did not gel so I added one more tbs, this gelled a bit but didn't really look right.

    Because 1 review said it was too runny I tipped out (~½ cup) of zucchini juice whole it was waiting.

    I used coconut milk, milk chocolate bits and omitted the coffee (I don't like coffee).


    It turned out perfect and very nice.

    I had high hopes for this recipe but unfortunately mine didn't turn out very well. The mixture was very runny and didn't cook in the centre (even after 45 mins, 180 degrees C, fan forced). I think that the zucchini probably needed to have the excess liquid squeezed off and discarded. I ended up cutting it up and putting it back in the oven for a further 10 minutes to try drying it out a bit!

    I don't like Zucchini so I used Sweet Potato and Pumpkin to make up 500g. I milled brown rice, used 3T rice malt syrup & stevia for my sweetner and Hazelnut nut meal and weetbix instead of all Almond. It's in the oven now
