  • 400 grams icing sugar
  • 200 grams Coconut, desicated
  • 200 grams Sweetened Condesed Milk
  • 5 grams vanilla extract
  • 10 grams Milk, (=approx 1 dessert spoon)
  • 1/4 teaspoon Green Food Colouring
  • 1/4 teaspoon Red food colouring

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Grease and line a loaf tin with Baking baper. Set aside.

  2. Put all ingredients except the food colouring into Tm bowl. Mix 20-30 sec/speed 5 until combined. Transfer mixture to bowl and set aside.

  3. Add 250g (approx is ok) of mixture back into TM bowl and add green food colouring. Mix 10 secs/speed 4. Press into base of loaf tin. Use back of a spoon to spread if you need to. Set aside.

    Give the TM bowl a little rinse and a rough dry with paper towel. Doesn't have to be super clean, it is just so the green doesn't change the colour of the red.

     

  4. Add another 250g (approx) of mixture into Tm bowl with Red Food Colouring and mix 10 sec/ Speed 4. Press into loaf tin ontop of green layer.

  5. Press remaining mixture ontop of red and green layers and place in refigerator to set. Approx 1-2 hours or overnight.

  6. Cut into small bite size pieces and try not to eat it all at once tmrc_emoticons.)

Tip

If you would like your layers to be really perfect you can refigerate each one before you add the next layer.

I like it a bit uneven, I think the white layer looks like snow.

This is super sweet and a great gift. Wrap in Cellophane and tie with a Christmas ribbon.

I created this is in the TM5 but am sure it is Ok for TM31 as well.

You can make this the traditional way by halving the mixture and using pink food colouring.

    I made this without the Christmas cheer, and simply used a small amount of pink food colouring to half the batch. It worked a treat. I have the TM31 and had no difficulty mixing the the recommended settings.

    I made this on the weekend as a thank you for my daughter's school and it turned out great (I have the TM31).  Very easy to make and the end result was lovely.  I did find that I couldn't mix on speed 5 for the 20-30 seconds, as the mixture become too thick but perhaps that's a result of the different models?
