Christmas Cookies

Ingredients

Cookies

  • 250 grams Butter, Softened
  • 250 grams sugar
  • 2 eggs
  • 500 grams plain flour
  • 1/2 teaspoons baking powder

Icing

  • icing sugar
  • lemon juice

Recipe's preparation

  1. 1. Add the softened butter, sugar and eggs into mixing bowl and mix on sp4, 1min

     

     

  2. 2. Add flour and baking powder and mix on sp 6, 5 sec then knead for 1 min

     

     

  3. 3. Turn out cookie dough onto thermomat or baking paper. Knead into a ball then flatten roughly into a disc. Wrap it in cling wrap and refrigerate for 1 hour or more if you have the time. 

     

     

  4. 4. Preheat oven to 200 degrees

     

     

  5. 5. Roll out to about 5mm and cut out desired shapes. Bake in oven for 5-6 min or until the sides start looking golden. 

     

     

  6. 6. Cool completely. In a small bowl mix icing sugar and lemon juice.the amounts vary depending if you prefer the icing to be thicker or runnier. I usually wing it. If you don't like lemon juice you can use water. Mix together and spread with a spoon or transfer into a piping bag. Decorate cookies with sprinkles, crushed candy canes or crushed nuts.

    Mine worked out really well and tasted yummy. They require stirring with a wooden spoon after the thermie and then it all came together beautifully when I kneaded it into a ball. I added flour when kneading and rolling to suit. Thanks! Now to ice them.
