Cinnamon Apple and Banana Bread

  • 200 grams Ripe bananas (about 2), cut into pieces
  • 150 grams Green Apple (cored) (1-2), quartered
  • 130 grams unsalted butter, cubed
  • 130 grams caster sugar
  • 2 --- Eggs, Large
  • 220 grams plain flour
  • 2 level teaspoons baking powder
  • 1 level teaspoon bicarbonate of soda
  • 2 level teaspoons cinnamon
  • 100 grams buttermilk
  • 2 level teaspoons vanilla extract
  • 1 pinch salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Apple and Banana Bread
  1. Preheat oven to 180 C. Grease a deep-sided loaf tin (25x10x11 cm)

  2. 2. Place ripe bananas and apple pieces into mixing bowl and process 6 sec/speed 6. Scrape down sides of mixing bowl with spatula.

  3. 3. Add unsalted butter and Caster Sugar and mix 20 sec/speed 4

  4. 4. Add eggs and mix 10 sec/speed 4. Scrape down bowl with spatula.

  5. 5. Add Plain flour, Baking powder, Bicarbonate of Soda, Cinnamon, Buttermilk and vanilla extract and combine 20 sec/speed 4.

  6. 6. Pour into prepared loaf tin and bake 45 - 50 minutes 170 C fan forced (180C normal oven) or until skewer inserted in centre comes out clean.

  7. 7. Allow to cool 10 minutes or so then turn out onto a wire rack to cool.

    Absolutly amazing, super moist, I didnt have butter milk so just used the lite milk I had in fridge. Yummo. Will be making again.

    I reduced the butter & sugar as per other’s suggestions. I only had pink lady apples so used 1 of those & lite milk instead of buttermilk but clearly still a hit!

    A very delicious cake.  I think for the weight concious that half the butter would be fine.  I will try this next time. There was butter in the bottom of the pan after it had cooked and you get butter on  your hands when you eat it. All very scrumptious!  But not good for the weight concious! I used 95g of rapdura sugar.  It is a beautifully moist cake with a lovely flavour of banana.

    I made this recipe today, and the family are very impressed.  Lovely moist cake with a lovely banana and cinnamon flavour.  The addition of walnuts would also be nice, or some pumpkin and sunflower seeds on top to add some texture.
