DOUGH

  • 1 sachet dried yeast or 7grams fresh
  • 250 g Milk
  • 100 g raw sugar
  • 75 g Butter, softened
  • 1 teaspoon salt
  • 2 eggs
  • 500 g plain flour

FROSTING

  • 115 g Butter, softened
  • 185 g raw sugar
  • 55 g cream cheese
  • 1/2 teaspoon vanilla extract or paste
  • 1/8 teaspoon salt

FILLING

  • 75 g Butter, softened
  • 200 g brown sugar
  • 3 tablespoons cinnamon

Recipe's preparation

  1.  

    Add yeast and milk to Thermomix jug. Heat for 2 minutes/37 degree/speed 2

  2.  

    Add raw sugar, butter, salt, eggs and flour to Thermomix jug. Mix 10 seconds/speed 6. Then knead 3 minutes/Dough mode

  3.  

    Remove dough from Thermomix jug to an oiled Thermomat, or an oiled bowl. If using a bowl, cover with plastic wrap, and leave dough to rise until doubled in size.

    Once dough is risen, roll out to a rectangle shape, approximately 1 cm thick. Spead dough with filling ingredient, butter first, then cinnamon and brown sugar. Once filling ingredients are evenly distributed, roll from long side to make a long scroll. If using a Thermomat, cut into individual scrolls using the Thermomix spatula.

    Place scrolls into a baking paper lined baking tray, leaving a centimeter between each, and leave a further 45 minutes to rise

    ** at this stage, scrolls can be covered and placed in the fridge overnight to be baked in the morning. To get scrolls back up to temperature in the morning, preheat oven to 120 celcius. Place tray of scrolls in oven for 30 minutes until they have doubled in size, then continue with baking instructions**

    Bake scrolls in a 175 celcius oven for 20 minutes or until lightly golden

  7.  

    While scrolls are baking, place all frosting ingredients into Thermomix jug. Mix 30 seconds/speed 4. Spread frosting over warm scrolls before serving.

    The dough was very sticky, and the thermomix couldn't knead it. Had to tip it out and knead it myself, then cooking them they turned into 'pancakes' not 'buns'. I was really looking forward to these due to the attached picture looked amazing but in realitly they where rather a disastor.

    Maybe I did something wrong but the dough was very sticky which meant it stuck to everything and the icing didn't mill down when all ingredients were placed in the bowl at oncee
