Clean Banana Berry Muffins

Grain Mixture to Soak

  • 75 g quinoa
  • 75 g brown rice
  • 70 g buckwheat
  • 50 g millet
  • 40 g almonds
  • 20 g linseed
  • 10 g sesame seeds
  • 200 g water
  • 1 tsp apple cider vinegar or lemon juice

Muffins

  • 80 g Pure Maple Syrup
  • 30 g coconut oil
  • 30 g Almond milk
  • 2 eggs
  • 2 small bananas or 2 large bananas
  • 2 tsp baking powder
  • 1 level tsp baking soda
  • 1/2 tsp Murray Valley Salt Flakes

Recipe's preparation

    Grain Mixture
  1. Soak the grains in the water and vinegar or lemon juice for 12-24 hours.

  2. Muffins
  3. Put grains (including any liquid), Maple Syrup, Coconut Oil, Almond Milk, Eggs and Bananas into TM bowl, beat on speed 9, 2 mins.  Scrape sides and beat for a further 30-60 secs on speed 9.

  4. Add Baking Powder, Baking Soda and Salt.  Mix until just combined on speed 4, 3-4 seconds.

  5. Fill muffin cases to 2/3 full.  Push a few berries into the mixture and bake at 180° for 20-25 mins until golden brown.  

    Berry options: Raspberries, Blueberries, Blackberries, Boysenberries or a mixture.
