Banana Muffins

  • 125 grams Butter
  • 2 eggs
  • 1 teaspoon vanilla essense
  • 3 bananas
  • 2 tablespoons honey
  • 2 tablespoons Maple syrup
  • 210 grams Gluten free plain flour
  • 100 grams decicated coconut
  • 1.5 teaspoons Gluten Free Baking Powder
  • 1 teaspoon bicarb soda

Recipe's preparation

  1. Pre Heat Oven to 190 degrees and grease muffin tray

  2. Add Butter to bowl and melt, 60 degrees, 2 min, speed 1

  3. Add Egg, Banana and Vanilla and combine 10 sec, speed 3

  4. Add maple syrup, honey, coconut, GF flour, Baking Powder and Bicarb and combine 10 sec, speed 4. Scrap down sides of TM. (Combine for further 6 sec, speed 4  if flour has not all mixed in).

    Check the consistency of the batter, if it is too dry add another splash of honey.

  5. Place into greased muffin tray and bake on 190 degrees for 20 mins or until golden.

    These are delicious. I used a combination of brown rice flour (170g) and chickpea / bessan flour (40g). Didn't have maple syrup so used 4Tbsp honey instead. I made regular-size muffins - two or three of them fell apart but the others held together well. Perhaps I didn't mix it enough? Mini sized muffins might be better?

    These are great! I add a dollop of Greek yoghurt and frozen raspberries or blueberries as well. A muffin you feel good about sending to school with the kids! Makes 24 mini muffins and 6 extra large ones
