Clone of Flourless and Butterless Orange Cake

Ingredients

Orange cake

  • 2 oranges, with skin left on
  • 3 eggs
  • 100 grams honey
  • 300 grams almond meal
  • 1 teaspoon gluten-free baking powder

Recipe's preparation

    Orange Cake
  1. Preheat oven to 170C.   Grease and line a round tin.

     

    Quarter the two oranges leaving the skin on and put in TM bowl. 

     

    Mix on Speed 8 for 10 seconds.

     

    Add eggs, sugar, almond meal and baking powder to Closed lid and combine 20 seconds, Counter-clockwise operation speed 4.

     

    Pour into cake tin and bake in oven for 45 minutes or until a skewer inserted into the centre comes out clean.  
    (NB:  The recipe I converted from said to cook for an hour - but I noticed mine browning after 30 minutes - so I then covered with alfoil and after 15 more minutes decided to remove it from oven).

    A nice change from sugary buttery cakes although the texture is quite dense (but I like that).  I baked mine in a greased ring tin so it cooked evenly through in less than 30 mins, and it came out easily.  Will definitely make this one again.

  • Lovely taste! It seemed a

    Lovely taste! It seemed a little strong for my kids so I might try it with one Orange peeled next time. I found that the cake was still not baked through after an hour, so I left it in another 20min which unfortunately resulted in the cake sticking to the baking paper sticking to the tin. But that might be just my oven... I'll work it out eventually I guess.
