Coconut Rough Slice

  • 60 grams Coconut (shredded or desicated
  • 60 grams Coconut sugar
  • 2 eggs
  • 60 grams coconut oil
  • 80 grams Self Raising Flour
  • 100 grams Milk
  • 1 teaspoon baking powder


  • 50 grams dark chocolate
  • 40 grams cream

Recipe's preparation

  1. Preheat Oven to 160Degrees and line a square cake tin with baking paper.

  2. Place coconut and sugar into mixing bowl and Mill 25sec/Sp9. Scrape the sides of the bowl.

  3. With the blades moving at Sp4 add 1 egg, combine, then add the other. Scrape the bowl and mix 5sec/Sp4.

  4. Add remaining ingredients and mix 5sec/Sp4-5.

  5. Scoop into prepared tin and bake for 15-20mins or until cooked (knife should come out clean)

    Allow to cool in tin

  6. Ganache
  7. Mill the Chocolate 10sec/Sp9

    Add the cream and cook 2-3mins/Sp2.

    Pour over cooled cake and allow to set.


  8. Cut into small slices. Enjoy!


Accessories you need



You could add a handful of shredded coconut in the last step, for a textural change to the cake.

I used cows milk, but will be trying it with coconut milk.
