CRANBERRY AND CORNFLAKE COOKIES

  • 125 grams Butter, softened
  • 90 grams icing sugar
  • 1 --- egg, (small)
  • ½ teaspoon vanilla extract
  • 175 grams plain flour
  • 1/2 level teaspoon baking powder

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    CRANBERRY AND CORNFLAKE COOKIES
  1. 1. Cream the 125grams butter and 90grams icing sugar for 1 minute, Speed 1.5 until smooth. Beat in the egg and vanilla extract until it is light and smooth for 1minute at a time, Speed 1.5.

    2. Sift in 175grams plain flour and 1/2 teaspoon baking powder. Continue to mix on gentle speed Gentle stir setting until just combined. Do not overbeat the dough.

    3. Slightly crush the cornflakes with your hands. Add in the Cornflakes and Cranberries to the mix on gentle speed Gentle stir setting until just combined.

    4. Taking small spoonfuls of the dough scoop onto the lined baking tray.

    5. Bake in a 170C preheated oven for 8 minutes. Rotate the tray and continue to bake for a further 8-10 minutes. When it is done remove from the oven. Let the cookies rest on the baking tray for 5 minutes before transferring to a cooling rack. Once completely cold store in an air-tight container.
