Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Recipe's preparation
Grease a baking tray and preheat oven to 160 degrees.
Place basmalti and brown long grain rice into TM bowl, place lid and MC on bowl, mill speed 9 for 1 min.
Add dried cranberries to TM bowl and chop speed 6 for 10 seconds.
Add butter, flour and sugar to TM bowl mix speed 6 for 10 seconds, then knead 20 seconds
"Dough mode" . It should look almost like bread crumbs.
Transfer mix onto floured bench, mould into a ball, then press out with your hands until 1/4 inch think. Use your chosen cutter to cut out your shapes and place on greased baking tray.
Bake in the oven for 20 mins until light golden. Allow to cool slightly before removing onto a wire rack to cool completely. Enjoy!

Tip
I made my own rice flour for this recipe by milling the two rices, you could easily just use 50g of shop bought rice flour.
You could make one big shortbread and cut it into pieces, you will just need to cook it for 25 mins.
