Cumquat Jam Chocolate Sandwich Biscuits

Ingredients

Dough

  • 240 grams raw sugar
  • 220 grams Butter, softened
  • 2 --- eggs
  • 65 grams cocoa
  • 350 grams plain flour

Cumquat Jam

  • 500 grams cumquats, chopped
  • 150 grams water
  • 300 grams caster sugar

Recipe's preparation

    Dough
  1. Preheat oven to 170 Celcius

    Add raw sugar to bowl.

    Millat speed 9 for 5 seconds

    Add 220 grams of butter or non-dairy alternative (e.g. Nuttalex)

    Mix 10 seconds speed 4

    Add 2 eggs and mix at speed 4 til incorporated (10 -15 seconds)

    Add gradually while mixing at speed 4 65 grams cocoa and 350 g plain flour til incorporated

    The batter is very sticky, you probably need to press pulse once or twice to get the last bits out!  Divide into 4 portions wrap in glad wrap and pop into fridge until less sticky. (1 hour plus, can be prepped the day before)

    Take out one portion out at a time and roll out (use cocoa to stop the dough sticking to mat or rolling pin).

    Cut out with desired shapes, try and do half without the centre piece missing and half with.  You can also bake the smaller cutouts.

    Bake for 15 minutes

    Cool on tray and then rack

  2. Cumquat Jam

    Cook 500 grams sliced cumquats and 150 grams water at 100 degrees Gentle stir setting

    Add  sugar (to taste) cook Gentle stir setting another 10 minutes at 100 degrees

    Then remove mc and place basket to stop splattering and increase heat to varoma and cook another 10 minutes.

    Place in prepared jars

  3. Sandwiches

    Use cooled jam to sandwich biscuits together... prepare on day of serving as jam can make biscuits soften.

Tip

Can be non-dairy if you exchange the butter for nuttalex or another non-dairy butter

Conversion from //www.giverecipe.com/chocolate-sandwich-cookies.html who used lemon jam and nuttella to join biscuit sandwiches together.

The jam recipe makes the cumquats still chewy so cook longer before adding the sugar if you want a less chewy jam.

Add less sugar if you want it more like marmelade - more tangy than sweet.
