  • 125 grams Butter
  • 125 grams cream cheese
  • 125 grams castor sugar
  • 2 eggs
  • 125 grams GF Self Raising Flour
  • 1 teaspoon vanilla
  • 1 teaspoon GF baking powder

  • 250 grams condensed milk
  • 1 teaspoon vanilla

Recipe's preparation

    Cake Batter
  1. Pre heat your oven to 180 degrees celcius.

    1.Place butter and sream cheese in bowl and mix on speed 6 for 6 secs, scrape down.

  2. 2. Add castor sugar and vanilla and mix on speed 6 for 15 secs, scrape down.

  3. 3. Add eggs and mix on speed 6 for 4 secs, scrape down.

  4. 4. Add baking powder and flour mix on speed 4 until all ingredients just combined.

  5. 5. Spoon into mini cupcake cases and bake in a preheated moderate oven for 8 mins or until cooked.

  6. Icing
  7. 1. Place all ingredients into bowl and mix on spped 6 until incorporated. (Depending on the humidity and temperature you may need to vary the amount of condensed milk. I use less when hot. If it is too runny refridgerate and it will set.

  8. 2. Pipe onto cupcakes.

I will not add the food colouring, divide the icing up and then add colour.
