Base

  • 125 grams Butter
  • 165 grams plain flour, (1 cup)
  • 85 grams rolled oats, (3/4 cup)
  • 90 grams brown sugar, (1/2 cup), I use Rapadura sugar

Topping

  • 160 grams currants, (1 cup)
  • 75 grams sultanas, (1/2 cup)
  • 235 grams water, (1 cup)
  • 10 grams cornflour, (1 tbsp)
  • 1/2 level teaspoons cinnamon, Ceylon, (less than 5g)
  • 20 grams lemon juice, (1 tbsp)
  • 1 level teaspoons Lemon peel

Recipe's preparation

    Method
  1. Preheat oven to moderate 180 degrees.


    Peel some lemon rind off lemon and grate in Thermomix 10 seconds, speed 10 (or until grated sufficiently, may need to scrape down and repeat). Set aside.



    Rinse currants and sultanas in a sieve with water. Add all base ingredients to TM bowl and mix 10 seconds, speed 4. You may need to turbo a few times to get the mixture to come together a bit. Tip into prepared baking tin and press down. Set aside and prepare topping.



    Add all topping ingredients to TM bowl (apart from lemon juice and rind). Cook 8 minutes, 90deg, reverse, speed 2. Add lemon juice and rind, let cool for a few minutes then pour over base. Bake for approx 30 minutes. Let slice cool thoroughly before slicing.


    ** This is not my recipe, it has been taken from The Australian Women’s Weekly ‘100 delicious biscuits & slices’ edition published 1982, and converted for Thermomix. Original recipe includes drizzle of pink glace icing over cooked slice however I don’t do this.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
