Dairy Free Vanilla Coconut Muffins

Ingredients

  • 100 g sugar, or caster sugar
  • 250 g Self Raising Flour
  • 15 g Coconut
  • 2 eggs
  • 50 g oil
  • 250 g soy milk
  • 1/2 teaspoon vanilla esence

Recipe's preparation

  1. Preheat oven to 200 degrees C and line a 12 hole x muffin tray with paper cases.

    Place sugar into thermomix on 10 secs/speed 8 ( to make caster sugar,miss this step if using caster sugar).

    Add flour, coconut and mix for 5 sec/ speed 2. To dry ingrediants add eggs, oil, soy milk, vanilla and lemon juice and zest.  Blend 10 secs/speed 5.

    Pour batter into prepared trays and bake for 20 mins or until golden.

Tip

As alternative can add 1/4 cup sultanas instead of coconut or mashed banana.

Orange zest and peel can also be substituted for the lemon.

 Cows milk can be added instead of soy milk.
