Delicious dairy free lemon drizzle cake

Ingredients

Cake

  • 160 gram SR flour
  • 110 gram sugar
  • 110 gram coconut cream (or milk)
  • 70 gram Grapeseed Oil
  • 1 --- lemon (rind only)
  • 2 eggs

Lemon Syrup

  • 120 gram sugar
  • 35 gram lemon juice

Recipe's preparation

    Cake
  1. Preheat oven to 180C.

    Add sugar and lemon rind and mix for 15 seconds speed 9.

    Add remaining ingredients and mix for 30 seconds speed 5.

    Put mix into a baking loaf (lined if necessary) and cook for 40 minutes.

  2. Lemon Syrup
  3. Place sugar and lemon into TM bowl and cook for 8 minutes on 90C on speed 1.
