  • 270g plain flour
  • 1/2 tsp baking flour
  • 50g ground almonds
  • 220g unsalted butter
  • 220g light brown sugar
  • 4 large eggs, room temperature lightly beaten
  • 1 lemon zest use potato peeler
  • 1tbs whiskey
  • 350g sultanas
  • 250g currants
  • 50g candied peel
  • 18 blanced almond halves

Recipe's preparation

  1. grind 50g almonds set aside


    put flour,baking powder,salt and lemon peel into jug and grind 20secs speed 9 ,add almonds mix through couple seconds,set aside


    attach butterfly and whip butter for 1-2mins speed 4,scrape down once or twice.till it white and fluffy


     


    add sugar and beat for further 1-2mins scraping down once or twice remove butterfly i sort bang it against insides of jug to get it all off


    put on speed 3 and gradually add eggs beating well and add a tbs of flour between each egg also add whisky


    now i put fruit in lage bowl and added tbs flour to prevent fruit sticking together,i then added half the butter mix,then fold through using a spatula, add rest flour and butter mix folding through.when thoroughly combined put into a 22cm grease and lined with grease proof paper,


    dip your fingers in cold water and smooth top cake and put almonds in circle to decorate


    tie folded newspaper around sides tin as in photo and put tin ontop more newspaper on baking tray cook at 170 for 40mins then lower heat and cook for further 1hr approx 


    recipe did say 2 hours but mine was ready after one i would cook without fan next time. check with skewer to see if comes out clean cakes ready

Tip

this recipe was converted from british book baking,they recommend you leave in tin overnight remove and wrap in foil and keep for week before cutting ha ha did not last that long but it was better few days later tmrc_emoticons.) just watch heat cook lower without fan
