Easter Egg Choc Chip Banana Muffins

Ingredients

  • 60 grams Butter
  • 380 grams SR Flour - or plain with 2 tsp baking powder
  • 120 grams raw sugar milled
  • 125 grams Milk
  • 2 eggs
  • 3 small ripe bananas or 2 large
  • 200 grams Easter Eggs Mixed, I used 4x solid mini and made the rest up of cadbury's hollow eggs

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre Heat Oven 170'.

    Weight in 200g of Easter Eggs. Grate 4sec / Sp5. 

  2. Empty grated Choc into a bowl, add this at the last step.

  3. Weight in 120g Raw sugar, mill 5sec / sp9.

    Weight 60g room temp Butter (Or if cold add: 2mins/37'/sp2)

    Add in 3x small/medium banana's or 2 Large (ripe is best, brake into 3rd's)

    Mix 10sec / Sp4. Scrape down bowl.

    weight 125g milk, 2xEggs, 4sec / sp4

    weight 380g SR flour 10 sec / sp4, scrape bowl 10sec / sp4.

    add grated choc Counter-clockwise operation 8 Sec / sp5.

  4. I used a 24 mini muffin pan sprayed with olive oil and used a generous table spoon to portion into each pan evenly.

    Bake 170' 15mins. I checked mine at 12mins as my oven is normally on the hotter side. So keep an eye on them They are meant to be firm on top when lightly touched. Leave in pan for 3-5 mins then take out carefully and cool on a rack.

    This made 30 mini muffins but make 12-15 large muffins. Larger Muffins 170' /17-20 mins.

    I have also made this in the mini loaf tins, which has made 6 large. 170 / 20 -25mins

Tip

With wet finger tips lightly touch to smooth the muffin to prevent burning tips

    A fantastic and easy recipe!! We loved using up some of our  many left over easter eggs in this, but any choc will do!
