Easy Lemon Yoghurt Cake

  • 160 grams oil, Ricebran or similar with no flavour
  • 2 eggs
  • 1 tbsp lemon zest, finely grated
  • 65 grams lemon juice
  • 280 grams Vanilla Yoghurt, thicker the better
  • 200 grams caster sugar

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

  1. Preheat oven to 160°C (325°F). Grease a deep cake, bundt or loaf tin.
  2. Insert whisk. Place the oil, eggs, lemon rind, lemon juice, yoghurt and sugar in a large bowl and whisk 10 sec/speed 5. Scrape down the sides
  3. Add flour and whisk until smooth 30 secs/speed 4. Scrape down the sides
  4. Pour into the tin and bake for 50–55 minutes or until cooked when tested with a skewer. Add foil to the top if getting a little brown on top (check tips) Allow to cool in the tin for 5 minutes.

Tip

I use coconut flavoured yoghurt but any vanilla or natural style yoghurt would work, you just dont want a fruit one.

If you need to cook it slightly longer than 60 minutes then place foil over top and give it slightly longer. I usually need 15 minutes extra

Add lemon drizzle on top if you wish
