Easy Pumpkin Tart (Crustless)

  • 450 grams pumpkin flesh, already steamed and mashed
  • 2 tablespoons Butter, or margarine
  • 100 grams sugar, or 200grams if wanted sweeter
  • 1/4 teaspoons cinnamon powder, or 1/4 cinnamon quill
  • 1 pinches salt
  • 2 tablespoons cornflour
  • 1 teaspoons baking powder
  • 250 grams Milk
  • 2 eggs
  • icing sugar, for decoration
  • thick cream or icecream, for decoration

Recipe's preparation

  1. 1. Pre-heat oven to 180°C and grease banking dish (I use a glass dish that is 23cm diameter and 3.5cm high)


    2. Add the butter and sugar into Closed lid TM and cream together for about 30s/Speed 4 or until creamed.


    3. Add the rest of the dry ingredients (cinnamon, salt, cornflower, baking powder) and the wet ingredients (pumpkin, eggs, milk) and mix together for about 45s/Speed 4 until nicely combined.


    4. Pour the liquid into the dish. The batter is very liquidy at this stage, so once the liquid is poured into dish, you will need steady hands to place in oven.


    5. Place in oven and allow to cook for about 45min to 60min. I use a fan oven and it cooks within 45min.


    6. Once cooked, take out the oven and allow to cool.
  2. Serving and Decorating
  3. 1. Once cooled, you can slice, serve with sprinkled icing sugar and extra cinnamon (to taste) and serve with thick cream (I also added raspberries on mine).


    2. Tart can also be served warm by itself or with vanilla or salted caramel icecream

Tip

There is no crust, so it is also ideal for elderly and also for young kids...skeaky way to get veggies in.

If you are lucky enough to have left overs, it does keep well in the freezer.

Can also be baked in individual ramakins and served warm with icecream or on own

I only use 100g of sugar, but if you want to make it sweeter, then up to 200g of sugar will work.
