  • 200 grams Butter, Leave out at room temperature overnight
  • 320 grams plain flour
  • 80 grams custard powder
  • 80 grams icing sugar
  • 8 eggs
  • 260 grams sugar
  • 480 grams Boiling water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough
  1. Place soft butter, flour, custard powder, icing sugar and 1 egg into mixing bowl. Combine 10sec/speed 6.
  2. Transfer the mixture onto a piece of glad wrap, wrap tightly and chill for at least 30mins.
  3. Filling
  4. Place boiling water and sugar in the mixing bowl and combine 10sec/speed 4.
  5. Add the evaporated milk and eggs, combine 20sec/speed 4.
  6. Transfer to a jug with spout for easy pouring.
  7. Assemble
  8. Once dough has chilled, preheat oven to 180C.
  9. Remove dough from the fridge, tear a small amount of dough, mould and press into the tart moulds.
  10. Place tart moulds onto a baking tray. Pour the filling into the prepared tart moulds to about ¾ height.
  11. Bake for approx. 15-20minutes until set and pastry is slightly golden.
  12. Remove from oven and allow to cool for 5-10 minutes.
  13. Remove each egg tart from tin carefully. Can be served warm or cold.
