  • 75 g butter
  • 1 egg
  • 3 tablespoon buttermilk
  • 7 tablespoon Maple syrup, + Extra fro Drizzling
  • 7 tablespoon Strong Coffee
  • 250 g plain flour
  • 2 tsp baking powder
  • 1 pinch cinnamon
  • 50 gram castor sugar

Recipe's preparation

    Preparation
  1. 1. Melt Butter. 100C, 2 Mins, Speed 2

    2. Put butter aside in another bowl, Wash the TM bowl.

    3. Insert butterfly. Beat egg, speed 3, 15 seconds.

    4. Remove butterfly.

    5. Add Melted butter, Maple Syrup, and Buttermilk to beaten egg.

    6. Combine wet ingredients, 2 seconds, speed 5

    7. Sift in Dry ingredients (Flour, Baking Powder, Cinnamon, Sugar) and combine. Reverse, 20 seconds, Speed 2.

    8. Scrape down sides and Repeat step 7. but only for 3 seconds.

    Careful not to over mix.

    9. Place one tablespoon amount of mixture in each muffin case.

    10. Bake for 20 mins or until firm when touched.

    11. When removed from oven, drizzle some maple syrup over top. 

     

     

    To Serve, Heat and Drizzle more maple syrup over top.

    Have with a steaming hot coffe! YUM!

    Althought the cupcakes were a nice texture and quite light, there wasn't a strong enough coffee flavour for me.
