Fruit and Nut Mix
- 100 grams desicated coconut
- 100 grams raw almonds
- 50 grams Dried Prunes
- 50 grams dried apricots
- 50 grams dried figs
- 2 apples, Red or Green core removed and cut into quarters
Muffin Mix
- 150 grams Butter, cubed
- 2 eggs
- 80 grams raw sugar
- 250 grams plain flour
- 260 grams Milk
- 2 teaspoons baking powder

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place all Fruit and Nut ingredients in the bowl and Turbo for 1sec x 4 times until roughly chopped. Set aside
Without washing the bowl, Place all Muffin Mix ingredients into the bowl and mix for 30 seconds on speed 4
Add Fruit and Nut mixture in with muffin mix and mix for 20 seconds on reverse, speed 4
Divide mixture into 18 medium muffin cases and bake for 25-30 minutes or until a skewer comes out clean.

Tip
To make this recipe lunchbox friendly simply leave out the almonds or replace with a grain or seed.
Any of the dried fruits can be substituted for other dried fruits if you prefer.
