GF Chocolate peppermint slice

GF Chocolate peppermint slice base

  • 185g Butter
  • 100g GF SR Flour
  • 100g GF P flour
  • 60g Desiccated Coconut
  • 50g brown sugar
  • 1 egg

Peppermint filling

  • 250g pure icing sugar
  • 2T milk powder
  • 50g Copha
  • 2T Boiling water
  • 1t Peppermint Essence

Chocolate top

  • 200g choc bits
  • 10g Copha
  • 1/4t Peppermint Essence

Recipe's preparation

    How to: Base
  1. Preheat your oven to 180°C and grease and line a slice tin.
    1. Add all to the Closed lid and blend sp4/ 20 seconds. It will look like a cake mixture..that's ok.
    2. Spread evenly into tray.
    3. Bake for about 25mins, until lightly golden.
    4. It needs to be hot for the next step so start preparing the filling as the base is about to come out.
  2. How to: Filling
  3. 1. Melt copha, 80/sp 2/ 5-8 minutes, or until melted.
    2. Add icing sugar, milk powder, sp3/1 minute. The mixture will look crumbly.
    3. Add boiling water and essence sp3/1 minute.
    4. Mixture should be smooth, soft and very spreadable.
    5. Very carefully spread it over the (hot) cooked base. Be gentle here or the base will start to crumble.
    6. Cool in the fridge.
    Cover with chocolate top.

  5. 1. Blitz choc bits, sp8/5 secs.
    2. Add copha and melt 50/2mins/sp3.
    3. Add peppermint essence and Blitz again briefly to combine.
    4. Pour/spread over the cooled peppermint filling and chill to set.
