Gluten Free CHOCOLATE SPONGE CAKE WITH DULCE DE LECHE

Ingredients

Sponge

  • 6 eggs
  • 150 grams caster sugar
  • 1 tablespoon vanilla extract
  • 115 grams potato starch flour
  • 30 grams cornflour
  • 30 grams Dutch Cocoa
  • 100 grams 70% cocoa dark cooking chocolate, chopped
  • 60 grams unsalted butter

Chocolate Ganache

  • 150 grams 70% cocoa dark chocolate
  • 100 grams Pouring Cream
  • 1 tbsp glucose syrup

Filling

  • Dulce de leche
  • whipped cream

Recipe's preparation

    GLUTEN FREE CHOCOLATE SPONGE CAKE WITH DULCE DE LECHE
    1. Preheat oven to 180c and grease 2 x 20cm square or round cake tins. Line the bases with baking paper.
    2. Combine potato flour, cocoa and cornflour in Thermomix bowl and mix 10 sec/speed 5. Set aside and clean and dry Thermomix bowl.
    3. Insert butterfly into mixing bowl and beat eggs, sugar and vanilla extract 5 min/speed 5 with MC removed.
    4. Transfer batter to a bowl.
    5. Clean Thermomix bowl and melt chocolate and butter together 50C/speed 3/5 min.
    6. Very gently manually fold the flour through the egg mixture one third at a time with a thin rubber spatula (as per conventional method) to retain as much air as possible. I find the manual method works best here to retain maximum air and a fluffy batter.
    7. Add chocolate mixture and gently fold through the batter.
    8. Pour half the mixture into each baking tin and bake for 15-20 min or until cakes are springy to touch.
    9. Transfer to wire racks to cool.
    10. Make chocolate ganache by mixing cream, chocolate and glucose syrup 50C/speed 3/5 min.
    11. Spread a layer of dulce de leche on the base of one cake. Top with whipped cream and sandwich cakes together. Top with coating of chocolate ganache.

Tip

In the last step you very gently manually fold the flour through the batter to retain as much air as possible.

Dulce de Leche can be purchased from specialty stores, or search the community to find a recipe to make your own.
