Ingredients

Gluten Free Ginger Biscuits

  • 350 g rice
  • 2 tsp baking powder
  • 80 g raw sugar to taste
  • 100 g chopped dates
  • 1 centimetre piece of ginger
  • 1 tablespoon ground ginger
  • 1 teaspoon bicarbonate of soda
  • 100 g unsalted butter
  • 80 gram golden syrup
  • 1 egg

Recipe's preparation

    Gluten Free Ginger Biscuits
  1. 1. Weigh rice and grind to flour on speed 9 for 2 mins. Add baking powder and mix on speed 9 for a couple of seconds. Set aside.
    2. Weigh sugar and dates and grind on speed 9 for 10 secs. Set aside.
    3. Peel fresh ginger and add to TM bowl. Blend on speed 9 for 5 secs.
    4. Add sugar/date mix, ground ginger, rice flour, bicarb and butter to bowl and blend on speed 6 for 5 secs.
    5. Add egg and golden syrup and blend on speed 5 until mix comes together.
    6. Spoon portions of dough onto silicone baking mat or greased baking trays and cook on 150 deg (fan forced) or 160 deg for 20-25 mins until brown.

    Very nice. I'll leave out the fresh ginger next time as it's a bit too strong for the kids.
