Gluten Free Moist Zuccini Cake with Lemon Frosting

Wet Ingredients

  • 200 grams Zuccini Grated
  • 120 grams apple sauce
  • 70 grams coconut oil
  • 5 grams apple cider vinegar
  • 5 grams vanilla essence
  • 2 eggs

Dry Ingredients

  • 180 grams GF SR Flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 65 grams sugar
  • 45 grams raisins / sultanas
  • 25 grams walnuts
  • 30 grams Shredded coconut

Icing

  • 250 grams cream cheese
  • 20 grams lemon juice
  • 150 grams icing sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Grate the Zuccini in the Jug 3 Sec Speed 5. Scrape down the bowl and repeat process.  Then add Apple Sauce,Oil,Apple Cider Vinegar and Vanilla Essence.  Leave sit for about 5 minutes in the Jug.

    Add in the rest of the Dry ingredients. Flour,Baking Soda,Salt,Cinnamon,Sugar,Raisins,Walnuts and Coconut.

    Then 3 sec speed 3. Scrape down the sides and repeat the process 3 sec speed 3.

    Pour into a prepared square cake tin with baking paper sprayed with cooking spray. 

     

    Lemon Frosting- Place the Lemon Juice, Cream Cheese and Icing Sugar into the Jug.  5 sec speed 5. Scrape down the bowl and repeat process.

    Pour icing onto the cake and grate Lemon Zest over the top. This cake can be put into the fridge to help set the icing. You can make a thicker icing jsut add more icing sugar but ensure you do not take away the lemon taste with too much icing sugar.
