For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 220 degrees.
Grease a 24 hole mini muffin tin

Add ingredients except flour into Thermomix bowl and blend 5 seconds/speed 8
Add the flour with motor running at speed 4, then increase speed to 8 for 10 seconds-put MC on for this bit
( I found if I added flour with everything else at the beginning it clagged around the blades and they didn't turn)
Scrape down sides of bowl then blend 5 seconds speed 8 or until smooth.

Fill each muffin mould 3/4 full (or try 1/2 if you want smaller ones)

Bake for 12-15 mins at 220C or until pufy and lightly browned.
When cool puncture a hole in each and use a piping bag and nozzle to fill with custard or whipped cream.
    Dip in melted chocolate.

Tip

These are not a round shape like those made with choux pastry-more like a chefs hat!. I filled moulds to 3/4. Perhaps filling to 1/2 might give a better shape.

This recipe was an experimentation and adaptation from the Thermomix Brazilian Cheese Puff recipe.

They dont taste quite like ones made with choux pastry but are nice and a gluten free and quick alternative.
