For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Weigh sugar into the TM bowl, place MC in the lid and mill for 5 sec on speed 8.
- Weigh in plain flour, butter, spice and salt. Combine for 10 seconds on speed 5. The mixture should resemble fine breadcrumbs. Scrape down the sides with the spatula.

Tip
If you prefer free-form biscuits, at step 4, simply roll dough into walnut sized balls and place on a baking sheet. Flaten slightly with a fork. Then bake as per step 5.
These biscuits have been a favourite in our family for many years. They were often baked, along with Anzac's and Gingernuts in batches that yielded 8-10 dozen! It was rare to open the pantry and not have a jar full.
