Banana bread
- 60 grams coconut oil
- 60 grams Honey / Maple Syrup
- 3 eggs
- 300 g ripe bananas
- 1/2 level tsp Bi Carb Soda
- 1 tsp lemon juice
- 100 grams oat flour
- 150 grams almond meal
- 25 g chia seeds
- 1 tsp Vanilla Bean Paste

Recipe's preparation

Preheat oven to 180' (fan forced).
Line a tin with baking paper and leave aside.

Place banana, honey, eggs, vanilla, coconut oil in mixing bowl. In a small dish mix the lemon juice and bicarb soda and alow to bubble. Add this to your bowl. Miss on speed 5 for 15 seconds. Scrape down the sides of the bowl

Add the oat flour, almond meal and chia seeds to bowl. Mix on
speed 3 for 10 seconds. Scrape down side of bowl and repeat if not mixed enough.

Spoon batter into prepared tin and place in oven for 45 mins-1 hour (a skewer inserted into the centre should come out dry). If the top is over browning cover with foil.
