  • 40 grams pepitas
  • 40 grams sunflower seeds
  • 170 grams dates, pitted
  • 180 grams strong hot coffee
  • 1/2 teaspoon cinnamon, ground
  • 1/2 level teaspoon bicarb soda
  • 90 grams Butter, softened
  • 120 grams brown sugar
  • 2 eggs
  • 100 grams Self Raising Flour
  • 1/2 level teaspoon baking powder

Recipe's preparation

  1. 1. Pre-heat oven to 180oC. Place muffin paper patties in a 12 muffin tray or grease tray.
    2. Place pepitas and sunflower seeds to mixing bowl. Mill 10 secs Sp 9. Remove and transfer to small bowl.
    3. Place dates, coffee, cinnamon and bicarb into mixing bowl and stand for 5 mins.
    4. Blend ingredients for 10 secs Sp 9.
    5. Add all remaining ingredients including milled seeds and mix for 15 sec Sp 4.
    6. Spoon mixture into prepared tray and bake for 20 minutes.
