Healthy Maple Sweetened Banana Muffins

  • 65g coconut oil
  • 60g Maple syrup
  • 2 eggs, (room temp)
  • 350g very ripe Banana
  • 55g Milk, (I used almond)
  • 180g flour, (I used 100g self raising and 80g rye)
  • 20g rolled oats, (extra for sprinkling over top)
  • 1tsp baking soda
  • 1tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Melt oil and syrup - 2 mins, temp 90, sp 1

  2. Add egg - whisk sp 3.5, 10 sec

  3. Add milk and banana sp 4, 10 sec

  4. Add baking soda, vanilla extract, salt and cinnamon sp 3, 10 sec

  5. Add flour and oats sp 4, 10 sec

  6. Add to muffin tins. Sprinkle oats.

  7. Bake for 20 - 23 mins



Fold through any fruit or chocolate right before dividing into muffin tins.
