- 65g coconut oil
- 60g Maple syrup
- 2 eggs, (room temp)
- 350g very ripe Banana
- 55g Milk, (I used almond)
- 180g flour, (I used 100g self raising and 80g rye)
- 20g rolled oats, (extra for sprinkling over top)
- 1tsp baking soda
- 1tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp cinnamon

Melt oil and syrup - 2 mins, temp 90, sp 1
Add egg - whisk sp 3.5, 10 sec
Add milk and banana sp 4, 10 sec
Add baking soda, vanilla extract, salt and cinnamon sp 3, 10 sec
Add flour and oats sp 4, 10 sec
Add to muffin tins. Sprinkle oats.
Bake for 20 - 23 mins
Fold through any fruit or chocolate right before dividing into muffin tins.
