Healthy Red Velvet Cupcakes

Ingredients

Cupcake batter

  • 160 g raw almonds
  • 2-3 Beetroots
  • 2 eggs
  • 1 tsp ground cinnamon
  • pinch sea salt
  • 40 g raw cacao powder
  • 1 tsp Gluten Free Baking Powder
  • 100 g macadamia oil or avocado, olive or coconut oils
  • 120 g Raw Honey
  • 1 tsp Vanilla Bean Paste
  • 100 g cranberries, dried, Optional

Recipe's preparation

    These cupcakes are not for the sweet tooth, they are a healthy alternative using raw honey as the sweetener.
    1. Preheat oven to 150 degrees.
    2. Add raw almonds to TM bowl and mill on Speed 9 for 5 seconds.
    3. Add peeled and roughly chopped raw beetroot (2 large or 3 small) to TM bowl and chop on Speed 5 for 10 seconds.
    4. Add all remaining ingredients except cranberries.  Mix on Speed 5 for 10 seconds.
    5. Add cranberries if using and mix on Counter-clockwise operation Reverse, Speed 3 for 5 seconds.
    6. Spoon into silicone muffin tray or patty cases.
    7. Bake in oven on 150 degrees for 30-40 minutes.
    8. Top with natural yoghurt, cream or in my picture some lovely coconut yoghurt with a cranberry.

Tip

The mixture will be of different consistency each time you make this depending on the amount of beetroot that goes into the mix.  Rather than weighing the beetroot I just use either 2 or 3 whole beetroots.  If there is more like about 300+ grams, then the mixture will be a lot runnier.  They still bake well.

    I liked them and my kids ate them, however hubby said they had a bitter aftertaste that I didnt notice. Next time I might roast the beetroot first as that will make them sweeter tmrc_emoticons.)
