Hidden Veg Choccolate Muffins

  • 2 zucchini, medium
  • 1 carrot, medium
  • 1 banana, medium, ripe
  • 2 scoops almond meal
  • 1/3 scoops cocoa powder

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 180 degrees

    + Cut the zucchinis & carrot into pieces
  2. Scrape down the bowl (if you want you can pour the zucchini and carrot in a separate bowl and squeeze the water out - I persoanely dont bother).

    Add all the remaining ingredients, I will usually use just under 1/4 cup of coconut oil - excludingdark chocolate chips

    (All "scoops" ingredients is a cup)
  3. 1 minute Closed lid, speed 2.

    Scrape sides of bowl and repeat if needed.
  4. Add dark chocolate chips for 15 sec Closed lid, Reverse blade Counter-clockwise operation, speed Gentle stir setting
    or
    manually fold into mixture with spatula.
  5. Using an icecream scooper (or equivlent) put into prepared muffin tray.
  6. Cook for 20 minutes.

    Check if cooked all the way through, let cool and enjoy.

Tip

A little tip: I put a small amount of rice underneath the muffin wrappers so they dont stick.
