Hummingbird Cake (Deliciously Moist!)

Ingredients

15 piece(s)

Cake Batter

  • 2 bananas, Ripe
  • 1 can crushed pineapple, Drained
  • 2 eggs
  • 200 g sunflower oil
  • 250 g Self Raising Flour
  • 1 tsp YIAH Pumpkin Pie Spice*
  • 50 g Desiccated Coconut
  • 270 g brown sugar
  • 60 g Chopped walnuts

Cream Cheese Frosting

  • 50 g unsalted butter
  • 100 g cream cheese
  • 1 tsp vanilla extract
  • 225 g Icing sugar mixture

Recipe's preparation

    To Make Cake:
  1. 1. Preheat the oven to 170 degrees.

    2. Grease and line a 23cm square cake tin.

    3. Add bananas to bowl - breaking into chunks as you go, then chop 3-4sec/speed 5.

    4. Add pineapple, egg and oil, and combine Counter-clockwise operation/5sec/speed 3.

    5. Add all dry ingredients and mix [counterclock]/15sec/speed 4 to combine.

    6. Pour into prepared cake tin, and bake for 45mins or until skewer inserted into the middle of the cake comes out clean.  Place on wire rack and leave to cool.

  2. To Make Frosting:
  3. 1. Place all ingredients into clean bowl and combine 20sec/speed 4, or until well combined with no lumps. 

    2. Spread onto the top of cooled cake, and garnish with crushed 'Sugar Walnuts' (search recipe community for this recipe!), plain walnuts, or anything else that takes your fancy! tmrc_emoticons.D

Tip

This is a wonderfully moist cake - and is a favourite with children and adults alike! Perfect for an impressive afternoon tea, birthday cake, or any special treat, it will remain moist and delicious for days afterwards if kept in sealed container in fridge!

*INGREDIENTS SWAP: If you don't have any YIAH Pumpkin Pie Spice, simply replace this with 1 tsp cinnamon.

    Made this recipe today in muffin form..I used peanut oil 150ml as I didnt have sunflower oil..I cut sugar down to 200gm..and added a handful of sultanas.. tastes lovely but I found it a little soggy and sweet..I would cut oil and sugar down even more next time..maybe the sultans added to the sweetness?

    This is so good! Very tasty. I did change a couple of ingredients, I used olive oil & blitzed the pineapple as it was rings, I also used the juice from the pineapple in the icing mix, it's a bit runny more like a thick glaze but it's so moorish, great flavours tmrc_emoticons.)

    This cake is delicious. Better than any cafe bought cake. Easy to make and perfect for a large family. I added a small handful of sultanas to the mix. I will definitely be revisiting this recipe.

    Thanks for your question Poripoo... I probably wouldn't recommend Olive Oil - I think it's heavier and has a stronger flavour than sunflower oil, I would try to stick to a 'lighter' oil... That being said: I've never tried it with OO, so if you do give it a go, let me know how it goes? tmrc_emoticons.D

    This cake is AMAZING! Fantastic recipe, it's super moist and keeps beautifully. I used the regular cinnamon, as I don't have any of that Pumpkin Pie mix - thank you, hubby is particularly happy - he has a new favourite cake!
