Individual Christmas Puddings

  • 750 g mixed dried fruit
  • 80 g brandy
  • 80 g fresh orange juice
  • 200 g Butter
  • 120 g brown sugar
  • 2 eggs
  • 115 g plain flour
  • 5 g mixed spice
  • 105 g bread crumbs
  • 100 g good quality dark chocolate

  • 250 g Butter, Made in TM as per Everyday Cookbook
  • 230 g icing sugar
  • 80 g brandy

Recipe's preparation

    Individual Christmas Puddings
  1. Place Chocolate in TM bowl and grate for 10 seconds on speed 8 & set aside

    Place bread in TM bowl and grate for 10 seconds on speed 10 and set aside

    Place brandy & orange juice in TM bowl and cook on 80deg for 3 minutes

    Pour brandy over fruit and leave for 30 minutes.

    Place butter and sugar in TM bowl with Butterfly and beat on speed 4 for 1 minute.

    remove butterfly and add eggs while mising on speed 4 for up to 2 minutes

    add flour, breadcrumbs and chocolate and stir on speed 5 for 30 seconds

    Add mixture to the fruit and stir till combined.

    Place mixture into individual silicone moulds and place on both levels of the varoma and add 1.5 litres of boiling water into the TM bowl and cook on Varoma for 40mins with Varoma in place

    Sorry I forgot to add method for brandy butter.

    Place butter, icing sugar and brandy in TM bowl and mix for 30seconds on speed 4.
