Janine's Coconut Biscuits - Thermie and Friends

Ingredients

  • 120 grams Butter
  • 120 grams sugar
  • 140 grams plain four
  • 2 tsp baking powder
  • 80 grams Desiccated Coconut
  • 1 --- egg
  • 1/2 tsp vanilla essence

Recipe's preparation

  1. Grease or line 2 x baking trays with baking paper.
  2. Preheat oven to 160 degrees fan forced or 180 degrees conventional.
  3. Place butter in TM bowl and melt at 60 degrees, speed 3 for 2.5 minutes. (or until butter has melted)
  4. Add sugar, flour, baking powder and coconut and mix for 5 secs on speed 3.
  5. Scrape down the sides of the bowl and then add egg and vanilla. mix for a further 10 secs on speed 3.
  6. Roll tablespoonfuls into balls and place onto tray (allowing room to spread). Flatten slightly with a fork.
  7. Bake for 10 mins. Allow to cool slightly on tray before transferring to rack.
  8. Enjoy!

    I needed to make a dairy free biscuit for a friend with an allergy & couldn't find a good recipe with the ingredients I had on hand - so I used this one & substituted the butter for 90g coconut oil. Yum! A big hit!
