Cookie dough

  • 2.5 cups Almond Flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup Erythritol/sugerfree sweetener of your choice
  • 1/2 cup Butter
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup Sugar free chocolate chips

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1. Melt butter 60 degrees speed 1 for 1.30 minutes.
    2. Add eggs, vanilla, speed 3 for 5 seconds.
    3. Add Almond flour, Baking powder, Bicarbonate of soda, Sweetener.
    4. Mix speed 4 for 10 seconds.
    5. Add Chocolate Chips on REVERSE speed 3 for 10 seconds.
    6. Optional step, refrigerate mix for 30 minutes.

    Scoop out 1 desert spoon of mixture per cookie and place on baking tray . 12 cookies per tray as they do spread. Pat down to desired shape. I made 24 cookies.
    Cook 175 degrees for 15 minutes or until slightly browned. Let cool before eating.

    These were quick and easy to make, and delicious. Used coconut oil as didn't have butter.They didn't spread overly much and had a nice texture, not overly crumbly like some almond meal-based biscuits. I was a bit naughty and also added in some dried cranberries for a bit of tart sweetness, which no doubt upped the carb content, but still quite happy with the result. Thanks for sharing!
