Keto Double Chocolate Muffins

  • 250 grams ground almonds
  • 50 grams cocoa powder
  • 85 grams olive oil
  • 1/4 cup --- brewed coffee
  • 180 grams nothing naughty fibre syrup-maple
  • 3 eggs
  • 1/2 level tsp baking soda
  • 1/2 level tsp sea salt
  • 80 grams sugar free chocolate drops, I use healtheries
  • 5 per muffin sugar free chocolate drops, to scatter on top of the muffins before baking

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 160°C and prepare 12 muffin holes in a tray with patty cases (or grease)
  2. Place all of the cake ingredients except the chocolate drops (both the 80g and the extra for the top) into the bowl and blend Blend10 sec/ speed 6.
  3. Weigh in 80 grams sugar-free chocolate drops and stir 15 sec/ Counter-clockwise operation/speed 2.
  4. Spoon the mixture into prepared muffin tray and then place 5x sugarfree chocolate drops on top of each muffin.
  5. Bake for 25 mins 160°C
  6. Allow muffins to cool slightly before taking them out of the muffin tray and placing them on a wire rack to cool completely.
  7. Store in an airtight container for up to 4 days
