Recipe's preparation

  1.  

    Preheat the oven to 180 degrees C Prepare 2 baking sheets with baking  paper.Put 120 g sugar in TX bowl and mill at speed 8 for 2-3 sec. Set aside in two batches one 75 g one 45 g.Put egg whites in bowl. Set time 2 minutes, temp 37, speed 2. Ensure bowl reaches temp before continuing.Put butterfly into bowl. Whip egg whites speed 4 until soft peaks form. Gradually add the 75 g of sugar and continue beating until stiff peaks form; Check and scrape down about each 2 min. The meringue will be glossy and smooth. Place into a clean bowl. Remove butterfly.Put yolk into bowl and whip speed 4, 10 sec. then fold into the meringue.Sift the flour over the mixture and fold in gently.Pipe the ladyfingers: Fit the pastry bag with the large plain tip and fill with the ladyfinger batter.Pipe strips of batter 12 cm. long and 1.5 cm. wide diagonally onto the baking sheets, leaving 5 cm. between each strip.Sprinkle half the 45 g lot of sugar over the ladyfingers; wait 5 minutes and sprinkle with the remaining sugar.Holding the baking paper in place with your thumb, lift one side of the baking sheet and gently tap it on the work surface to remove excess confectioner's sugar.Bake without opening the oven door for 10 min.Then, rotate the baking sheet so the ladyfingers colour evenly.Cook until lightly golden, about 5 more minutes.Remove the ladyfingers from the baking sheet with a metal spatula while still hot, and let cool on a rack.
