Ingredients

Lebkuchen

  • 60 g Butter
  • 240 g golden syrup
  • 260 g plain flour
  • 1 tsp bicarb soda
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cardamom (or you can mill this before you start)
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cocoa
  • 1 tablespoon Milk
  • strawberry or raspberry jam

Recipe's preparation

  1. Preheat oven to 180C.

     

    Melt butter and golden syrup 5 minutes100C speed 2. Stir for 5 minutes on speed 3 to allow the mixture to cool slightly.

     

    Add remaining ingredients and mix for 5 seconds on speed 4. Scrape down the sides of the bowl and mix for another 5 seconds on speed 4.

     

    Leave the mixture to cool for 1 hr. You can transfer it to another bowl before cooling if you like.

     

  2. Gently knead the mixture to form a soft dough. You may need to add a little more plain flour if it is too sticky. Roll out the dough to about 5 mm thick and then cut out shapes using cookie cutters. OR

    Place the dough into a cookie press and press out shapes onto a greased baking tray.

     

    Spoon or pipe little blobs of jam into the centre of the shapes.

     

    Bake at 180C for 12-15 minutes dependong on how crunchy you like your biscuits.

Tip

Use homemade jam.

Drizzle with melted chocolate for an added treat.

    Planning to make these today using recipe from WW chocolate cookbook which I've been using for many years each Christmas, and deciding too hard to convert.  So pleased to find your recipe which is almost the same except you have no mixed peel in yours. I also spread underside with chocolate.  And ditto to the above comment re the jam and wooden spoon.

    I make these every Christmas for my in laws, and was just contemplating how I would use the thermie this year... And then I found your recipe, the same as the one I use, I make star shapes, and also spread chocolate on the back, bit of a tradition now, thank you for sharing

    This recipe is almost exactly the same as my Lebkuchen recipe so it was great to see it converted in the TM. I add the zest of one orange & spread melted chocolate on the underside of each biscuit which works really well. To ensure the jam doesn't run down the biscuit, I indent the centre of each biscuit with the end of a wooden spoon. They are always a hit. Thanks for posting this recipe  tmrc_emoticons.)
